blondies are like the overshadowed younger siblings to brownies. how come brownies get all the love and attention? sure, blondies may not be so chocolate-y that they make your teeth ache, but they have their own special qualities. go make some and see for yourself.
blondies
1 cup sifted all purpose flour
1/4 tsp baking powder
1/8 tsp baking soda
1/2 tsp salt
1/2 cup chopped pecans
1/3 cup butter, melted
1 cup packed brown sugar
1 egg, beaten
1 tbsp vanilla
1/2 cup butterscotch chips
preheat the oven to 350 and butter the bottom and sides of a 9x9x2 pan.
add the baking soda, baking powder, and salt to the sifted flour and sift again.
add the chopped pecans to the flour mixture and mix well so that all the pecan pieces are coated with flour.
add the brown sugar to the melted butter and mix well. be sure to cool the butter and sugar mixture slightly.
add the beaten egg and vanilla to the butter and sugar mixture and blend well.
add the flour mixture a little at a time.
mix in the butterscotch chips.
spread the mixture in the pan and bake for 20-25 minutes.
and for goodness sake, don't overbake them!! otherwise, they're dry and crusty...like some packaged brownie found in a gas station
delicious!
