butternut squash apple cranberry bake

the arrival of fall means winter squash season.  yum.  pumpkins, butternut squash, acorn squash, and aspaghetti squash, just to name a few.  they are fabulously versatile as they pair well with both sweet and savory seasonings.  and best of all, they super nutritious (beta carotene, fiber, and vitamins A and C).  the hardest part of cooking with winter squash is breaking it down.  the hard skin can be tough to get through, but here are a few tips and tricks.

to continue my thanksgiving series, here's a recipe from simply recipes.

1 tsp of salt
1/2 tsp of ground nutmeg

how to

2. prep your squash and apples.  peel and cut the squash into 1" cubes.  core the apples and cut into 1/2" slices.
3. place squash on the bottom of a 7x11 ungreased baking dish.  top with apples, then cranberries.
4. mix sugar, flour, salt, and nutmeg and sprinkle on top.  dot with butter.
